Notting Hill Carnival – 30th & 31st August 2009
Since 1966, August Bank Holiday Weekend has meant one thing in West London; The Notting Hill Carnival. The biggest street festival in Europe returns this year, bringing the sounds, sights and tastes of the Caribbean to London.
Food is a big attraction at the carnival, with over 1 ton of Jamaican patties, and 12,000 mangoes eaten, and with 25,000 bottle of rum being drunk every year, the carnival is a veritable feast of authentic cuisine.
Stalls offering their best jerk chicken line the streets, and the Carnival is your chance to try Caribbean and West Indian dishes such as curried goat, and traditional rice and peas.
If you can’t make it to the carnival this year, we at Y4Food don’t want you to miss out, so here’s how to make your own jerk chicken, and bring a slice of the Caribbean to your dining table.
6 lb Chicken
1 tbsp Salt
2 tsp Garlic powder
1 tsp Paprika
1 tsp Soya Sauce
1 small onion
3 tbsp Jerk Seasoning
Mix the salt, garlic powder, paprika, jerk seasoning and soya sauce in a bowl. Grate the onion and add to the bowl, then rub the mixture over the chicken and leave in the fridge to marinate for at least 2 hours. Roast in oven at 180c (slightly less if its a fan oven) for 1 to 1 1/2 hours.
For added Caribbean authenticity, serve with rice and peas. Yum!
